3 AA Rosette restaurant, THOMPSON St Albans are seeking a Head Waiter, to join our team, working side by side with our Restaurant Manager, with the following roles & responsibilities:

  • Lead Service – Responsible for leading service and front of house team day to day, number two to the Restaurant Manager, some weekend cover holiday cover for the Restaurant Manager, service and table planning, structured and meaningful briefings.
  • Front of House Team Training & Leadership - Future planning of events, rotas and staffing, bi monthly 1-2-1's, writing, updating and managing SOP's as a way of life, training plans / sessions, across all areas including; up selling, service, operational SOP’s, building maintenance, mise en place and cleaning schedules.
  • Team Bond / Spirit - You must be genuinely interested in and motivated by having a bond with individuals in your team, in order to really get the best out of them and manage them effectively. Encourage a drink after Saturday night service, staff socials every few months and take the team for occasional casual drinks in the pub, after work on a Sunday, at the end of the week.
  • Commercially Aware - Recognise the importance of driving down staff costs, highly focused on pushing to exceed revenue and average spend per head targets, cost reductions in areas and operational costs.
  • Marketing - Contribute with new marketing ideas, understand the importance of accurate data capture at the point of booking, email addresses for marketing, how guests heard of us, in order to help measure the success of marketing campaigns / activity.

Essential experience: Number one is long service in previous roles. Our team need stability and someone who will still be there when the going gets tough... with a fine dining background, Michelin Star or 3/4 Rosettes ideally.  Phil Thompson wants his star back; this is an integral role in helping us reach this goal.  Experienced Chef de Rang’s (waters) should apply.

Phil Thompson head chef and owner, previously held a Michelin Star for 4 years. We are a 3 AA Rosette Restaurant, won the St Albans Chamber of Commerce, Best Restaurant Award 2015/16, Best Restaurant and Best Chef award in the Hertfordshire Life Food & Drink awards 2016/17 as well as current holder of a Michelin Plate, meaning Michelin are watching us!

The role offers progression, training and mentorship, a good basic, bonus, cash tips and TRONC / service charge on top. We are closed Sunday night, Monday and Tuesday lunch time, you will also receive another day off each week.
