I'm recruiting a Head Pastry Chef for a premium London events business, taking full ownership of pastry production, menu development and the pastry team.

You'll have almost complete creative control, developing new desserts and pastry concepts from initial idea and tasting through to large-scale event production.

The Operation

• Premium London events

• Bespoke menus and tastings

The Role

• Lead the pastry operation and team
• Design and develop new pastry menus
• Take concepts from tasting to live events
• Plan production around event volumes and deadlines
• Create dishes that can be delivered consistently at scale
• Drive presentation, quality and consistency
• Train and develop pastry chefs
• Continuously evolve the pastry offering

About You

• Experienced Head Pastry Chef or senior pastry leader
• Events or high-volume hotel experience is essential
• Strong high-volume production experience
• Creative with excellent technical pastry skills
• Confident developing menus from scratch
• Understands how to scale dishes without losing quality
• Strong team leadership and organisation
• Calm and confident around demanding event deadlines

This needs someone who is creative but commercially and operationally switched on – able to create something beautiful for a tasting and then work out how to deliver it just as brilliantly at scale.
