Only open 3 nights per week, Restaurant Forage Kitchen is a small private dining room with an open kitchen where guests can enjoy a unique meal experience by immersing themselves in our exquisite tasting menus, where our talented chefs showcase the best of wild-foraged ingredients and ultra-seasonal creations; from our 10-course tasting menus to the innovative “Future Flavours” nights, blending the current with exciting new dishes and techniques.

In addition to our restaurant we have a brand new state of the art production facility and dark kitchen, where over the next 12-24 months we are on an exciting journey to give more support to our business internally, whilst at the same time move into new areas including product design and development, artisan bakery, street food pop-ups, video production and much more.

JOB DESCRIPTION:

Main responsibilities include but not limited to:

  • Working closely with our group Exec chef, but responsible for developing, preparing and delivering our 10 course taster menu that change in full each month(!). Focusing seriously high quality & seasonality, as we as preserving techniques to ensure we can make use of nature's bounty all year round.
  • Manage inventory, ordering and cost control.
  • Help develop as well as get involved in additional projects often involving filming (Our sister company is a media firm, so lots of video and social media opportunities to expand reach.)
  • Help develop our food and drink travel trips and pop-ups - throughout the UK & the potentially overseas.
  • Ensure the kitchens and other food preparation/storage areas maintain cleanliness and hygiene standards and ensure compliance in these and other areas.

Reporting to: MD / Group Exec

REQUIREMENTS:

  • Serious food knowledge & skill with proven experience in high-end kitchen environment (minimum of 3 rosette/star plus).
  • Food lover, seasonal produce fan + buckets of passion.
  • Strong communications skills are essential, not only within the kitchen team but also engaging with customers, offering insights into the menu’s dishes and the stories behind them to diners.
  • Food Hygiene Level 3.
